Orange Patties with Passionfruit Icing

Light and tangy…see if you can stop at one!

Perhaps not a healthy recipe for kids, but certainly a yummy treat for having a yibba yabba with guests! These are so quick and easy to make and sure to be a crowd pleaser! Get the kids to help too! I love to make these for bake sales..always a winner!

125g soft butter or margarine
3/4 cup of caster sugar
1 teaspoon of vanilla essence
2 eggs
1/4 cup milk
2 oranges (you will need the ‘zest’ and juice from both)
2 Cups of Self-raising flour

For Passionfruit Icing

2 cups of icing sugar
2 tablespoons of soft butter or margarine
1 passionfruit
1/2 teaspoon of vanilla essence

Method: (make sure you zest and juice your oranges first)

1. Preheat your oven to 180 C

2. Beat the butter, sugar and vanilla essence until light and fluffy.

3. Beat in the eggs and milk.

4. Gently mix in the flour, orange juice and zest.

5. Spoon into 24 patty cases and bake in for about 12 or so minutes (Be careful not to overbake as they will become dry)

6. When cool, spread with passionfruit icing.

(For icing, beat icing sugar, vanilla essence and butter together until well combined. Stir in the passionfruit. Sometimes I add a dash of milk to get the right consistency…just depends on how juicy those passionfruits are!)
