Lemon and Coconut Weetbix Slice

Here is a healthier version of the traditional lemon slice. Serve it up with your cuppa or as a lunch box treat for school. Best of all, this is a no bake slice that anyone can make! (The kids can have a go at this recipe too!)

Lemon and Coconut Weetbix Slice

Ingredients:
12 weetbix finely crushed (or 2 cups of left over weetbix!) use your food processor to make them extra fine or place in a ziplock bag and crush them with a rolling pin!
1 cup desiccated coconut
1 tin sweetened condensed milk (400g) Skim milk version is fine too!
1 lemon (juice and zest)

Topping:
Icing sugar
1 lemon (juice and zest)
Extra coconut

Method:
1. In a large bowl place crushed weetbix, coconut and lemon zest.

2. Mix in the condensed milk and the lemon juice. Stir until well combined.

3. Press firmly into a slice pan. (Make sure you line the tin with paper first!)

4. Place in the fridge for at least an hour or more if you can wait!

5. Mix up a basic lemon icing (see note) and spread over the weetbix slice. Top with coconut and sprinkle with lemon zest.

6. Allow to set in the fridge. Slice into squares and serve!

Notes:
*This slice should be kept in the fridge and eaten within a few days.
*Add as much or as little lemon juice or zest as you like! Some kids aren’t too fussed on zest, so leave it off the icing and just add the juice to the base mix.
*Basic icing non fat: Mix 1 cup of icing sugar with 1 tablespoon of lemon juice. Stir until you have the right consistency, you may need to add a few drops of water or more lemon juice.
*Basic icing: Mix 2 cups of icing with 1 tablespoon of melted butter and enough lemon juice to be able to pour on the slice.
*This recipe makes a soft and chewy slice. If you prefer more crunch, use half a tin of condensed milk, or add more weetbix!(this will make the slice a lot healthier, lower in calories!)
